Valpolicella Ripasso Classico Superiore DOC
A special dedication goes to the ancient Roman road where the villa Quintarelli Ruffo and the family properties have insisted for centuries. A way of connection between valleys, that of Negrar and that of Valpantena. A furrow created by man and never dispersed. The Strada Campiona is taken up in the ancient maps and, in particular, in that of 1746, which highlights its importance and its value for the territory. A little bit the symbol of a journey, ours, through the centuries and into the future, between vineyards, wine and authentic Valpolicella.
Production area: Negrar Valley, classic Valpolicella.
Grapes: Corvina gentile, Corvina grossa, Rondinella, Molinara.
Harvest: By hand with positioning of the grapes in suitable containers; the grapes are sent immediately to the pressing. Part of the grapes is subjected to a drying period of about 30-40 days.
Pressing: Soft in a horizontal press at low temperature.
Fermentation: Vinification in steel at a controlled temperature and subsequent light cryomaceration with hand punching down.
Refinement: After the red vinification, the wine is passed over the Amarone marc of the following year and a period of contact with the skins of about 30 days is applied. After having performed the Ripasso technique, it is drawn off and aged in large French oak barrels from Allier and Troncais for about 18 months. Subsequently the wine is left to refine in the bottle for 3-5 months before being released on the market.
The color of the wine is particularly intense with a ruby red hue and a purplish reflection. Its scent is rich in red fruit and in particular of ripe cherries and berries. Sensations of withering due to the Ripasso technique, more corpulent and decisive tannins but particularly round and pleasant on the palate. Good spiciness with a strong sensation of black pepper and a particular note of warm nutmeg. Persistent finish with an evident fresh sensation of cherry and almond dried fruit. Finely balsamic with an intriguing menthol note.
Strada Campiona Valpolicella Ripasso Classico Superiore is a very versatile product with a great adaptability in the kitchen. Before that, a wine that thrills the youngest palates and is also preferred for lounge time to accompany appetizers and small savory pastries based on medium-flavored cured meats and cheeses. Excellent to accompany Soppressa and salami in its various Italian facets. Pleasant with cheeses from the Alpine foothills tradition, Piedmontese tomes, Monte Veronese Mezzano PDO, seasoned Asiago PDO and Vezzena from mountain pastures. Intriguing also with goat cheeses of Sicilian origin from Maltese goats. It goes well with first courses based on meat sauces, meat with the tip of a knife, from Romagna or Chianina PGI. Pleasant for Tuscan crostini and Piedmontese fassona steaks.
